Laurent loves what he does and it shows. Although classically trained in the traditional French method, Laurent has an open attitude to food. His management style is such he receives respect from his staff and has a low staff turnover; he treats his staff fairly and equally. Laurent has been in the hospitality industry for 25 years now and loves the way it is going forward, and that there is always room for improvement. He enjoys the industry for its challenges, self-satisfaction and of course for making people happy and having a great time.

MACIEJ ZIMMY: RESTAURANT MANAGER & HEAD SOMMELIER

 

Maciej Zimny is the Restaurant Manager/ Head Sommelier at Hippopotamus. Joining the team in November 2012, Maciej works alongside long-time lauded executive chef Laurent Loudéac. “It was time for a new challenge. I opted for Australia and got a job working front-of-house for Dockside in Sydney, a large hospitality group specialising in functions. I was promoted to front-of-house manager and became the company’s wine consultant after one year and after two years I joined Matt Moran’s Aria as senior sommelier. I fell in love with Australasian wines and especially New Zealand wines, so I decided to come to New Zealand. Hippopotamus stood out for me, with its outstanding reputation, focus on art and culture and being an independent boutique hotel, not part of a chain”
NZ has many similarities with Poland and I felt at home almost straight away. Both economies are now more open, they’ve developed more sophisticated dining cultures and both enjoy great produce.

Hippopotamus restaurant is delighted to introduce its luxurious Private Dining Room “Le Salon de Louis Roederer”

We have designed a gourmet selection of Private Dining set menus for you to choose when making your reservation.

This intimate room has a capacity of 12, with a minimum of eight. For groups of less than 8 we charge a small room hire fee of $250.00 inclusive of GST.

Billiards Room

Known to be the most exotic dining room in New Zealand, the stunning Billiards room can host as many as 20 guests around its large table.
The beautiful décor and layout of the room allows for a sophisticated experience as guests are able to walk about the room to view the wonderful artwork. The room also holds two original billiard tables ready to play, for those up for a game.
A personalised kitchen allows for meals to be prepared and ready to be served in moments for guests to indulge in true fine dining style.
